
Bethany Moe
After graduating from Moody Bible Institute with a degree in Lifetime Wellness and Sports Management, Bethany is finishing a second bachelor’s degree in Dietetics. Read her words as she describes her passion for nutrition and dietetics.
“I once heard that people are similar to onions with many layers. I have found that to be true about myself as a dietetics student. As I have peeled back each layer and learned more and more about myself, it seems that each new piece matches the field of dietetics in a special way. The heart of the dietetic professional is to nourish the body toward optimal wellness. As I have peeled away the layers I have realized my heart is to learn how best to accomplish this. I began my career with a bachelor’s degree in Lifetime Fitness. My first jobs upon graduation were in food service management and in wellness. As I worked within these settings my passion for nutrition was ignited.
“Just like no two onions are the same, I have discovered many of my experiences have uniquely prepared me for the profession of dietetics. I was selected as the first dietetics student to be the recipient of the Mary Katherine Goldsmith Internship at St. Luke’s Hospital in Kansas City. During this internship, I spearheaded a weekly educational farmer’s market to enhance the wellness of the hospital employees. I engineered an enticing marketing plan, worked with vendors to procure the foods, manage the accounting, and developed weekly recipes that promoted the fruits and vegetables of the market. This experience helped me to uncover my passion for cooking, in particular for creating healthy recipes. I have been invited to present nutritious cooking demonstrations in a variety of settings for both large and small groups. I was also selected to represent Smart Chicken, a Midwest-based all-natural Poultry Company, as their chef demonstrator at a large women’s expo event. Additionally, I am trained to be a Kid’s in the Kitchen coach. This role gives me the opportunity to teach elementary students basic cooking skills while learning nutrition.”
